The daily struggle to figure out what to eat for lunch is real. Admittedly, some days we are more successful than others (see some our Family Meal posts!). Even though we spend our days figuring out how to create delicious food products for our clients, we are only human and sometimes we eat leftovers just like regular people! Here's a peek behind the scenes at what the Culinologists of CuliNex ate this week:


Not Yo Momma’s Sandwich

“Ok, I didn’t make it myself but….sandwiches are always perfect for lunch al desko. Guo Kui Szechuan Flat Bread with Pork, chili sauce, garlic, soy, green onion, carrot and sesame oil from Country Dough in Pike Place Market."


Mediterranean Escape

"A recent dive into the depths of my freezer revealed some lamb ribs, so they got the royal treatment with lots of aromatic spices like cumin, coriander, cinnamon, black pepper, turmeric, chiles with chickpeas and tomatoes during a long braise over the weekend. Leftovers like this reheat really well, so they make a perfect lunch al desko. Once I nuked the dish in the microwave at the TK, I freshened it up with mint from my garden, tomatoes, a few pickled jalapenos, whole milk yogurt and a drizzle of olive oil and some toasted sesame seeds I borrowed from someone's project bin. Is it Spring Break yet?"

“I love breakfast! Any chance I can eat breakfast for lunch or dinner, I take advantage of it. This lunch of an ‘everything’ bagel with schmear, smoked salmon and veggies was especially delicious because I found some ripe tomatoes to slice on top.”

Mexi-Mac Monday

“Also known as ‘it’s Monday and this was all I could find in my fridge last night’. My heavy carb loaded lunch consisted of leftover homemade macaroni and cheese with a heaping scoop of (also leftover) salsa verde chicken topped with a drizzle of Sriracha and half of a toasted bagel smothered in cream cheese. And since it was Monday at noon, a cup of coffee was also guzzled down.”

Turning Leftovers into Lunch

"We’ve been doing tons of fun projects around vegetables and salad dressings. So, these days, my lunch al deskos are all about salads!  This little beauty was a throw together from Taco night leftovers – romaine lettuce with roasted corn, chicken, Colby-jack cheese and cherry tomatoes (which you can’t really see under the taco-style dressing) and a quick dressing I put together with salsa, sour cream and a bit of lemon juice."

“This is the result of your wife taking the amazing oven fried fish leftovers for her lunch and leaving you to scrounge through the fridge last minute on the way out the door. Reheated hotlink, Greek yogurt, and a cookie. Not much to look at but pretty darn good anyway. And it keeps the wife happy.”
