Marination started off as a local Seattle food truck featuring Hawaiian Korean fusion cuisine. Voted America’s Best Food Truck by Good Morning America, they rapidly gained a cult-like following for their tender, banana leaf-smoked Kalua pork, made in small batches at their commissary kitchen. To keep up with the demand, they quickly expanded to two brick and mortar restaurants but realized the process of batch cooking the pork was cumbersome and inefficient, so they approached CuliNex to see if there was a better way.
Replicating Marination’s smoky, sweet Kailua pork in a commercial setting required reformulation of the traditional recipe. CuliNex sourced a commercially available, locally grown, natural pork shoulder and source a co-packer able to consistently cook the pork to fork-tender perfection every production run.
With the commercialization services of CuliNex and their signature pork being produced at a co-packer, Marination can now be confident their customers will have the same amazing dining experience every single time. They also save on labor costs and have more capacity at their local kitchen to focus on their ever-growing foodservice operations.
