Challenge

Lucini Italia offers authentic, handcrafted gourmet foods inspired by the culinary traditions of Italy, including premium olive oils, vinegars, salad dressings, and pasta sauces—some of which were manufactured domestically and some manufactured abroad. After having on-going challenges with Italian co-packers, Lucini approached CuliNex to see if there was a more productive and cost-effective way to get their products made in the US.  

Solution

Lucini needed full control over their products, so CuliNex reformulated their soups, pasta sauces and salad dressings with domestically sourced ingredients, wrote complete product specifications, and set up a custom Quality Management System. The QMS program included real time shelf life testing and a comprehensive co-packer manual, complete with systems, procedures and documentation for managing production to ensure products were made to specification each and every batch. CuliNex completed routine batch testing with every production, including analytical and organoleptic evaluations for continuous quality control. The program was designed to anticipate any production problems, so co-packers were prepared to handle any situation that might arise quickly and efficiently.

Benefits

Not having the in-house resources or expertise, the custom QMS program from CuliNex allowed Lucini to decrease its costs and even improved productivity at co-packer operations. They also finally had full control of their intellectual property with buttoned-up product specifications and procedures. The program opened the lines of communication between ingredient suppliers, co-packers, and customers for positive long-term business relationships and continuous improvement.
